Communication

Here is my Senegal phone number, and calls are always welcome but can be expensive! (Google calling and international texting is pretty cheap I think...)

Senegalese Recipe Series!

Mafe (The Main Dish of Senegal)

Ingredients:

3 cloves garlic
1 lg onion, chopped
2 Maggi cubes
2 hot peppers
4 lg carrots
2 lg manioc roots
6-8 sweet potatoes
6-8 potatoes
1 cabbage (small)
1/2-1 kg beef, cubed
1/2 cup tomato paste
1 bay leaf
1 1/2 -2 cup peanut butter
salt and pepper
Rice
Opt: three cubes sugar
Opt: 2 T oil

How to:
In a mortar and pestle, pound the garlic, onion, and one hot pepper with the Maggi cubes; set aside. Peel all the vegetables, cut into manageable chunks and set aside. Brown the meat in a large pot (add oil if the meat is lean). Add crushed garlic, stir, and lower the heat. Add all the vegetables, stir, and mix well. Add enough water to cover the vegetables. Turn up the flame and bring to a full boil. Add tomato paste and bay leaf, and stir well. Let boil five minutes or until all the paste is absorbed. Add peanut butter and stir well. Season (sugar, salt, pepper) to taste. Finally, add one hot pepper and boil until sauce thickens. Remove bay leaf and serve hot over rice. NOTE: Occasionally test the sauce for thickness by removing a spoonful and allowing it to cool to room temperature. When ready, the sauce should coat the spoon thickly without being too runny. Makes 6-8 servings.
